So this is just a standard pound cake with added bananas.
Pound cakes are made with 250g each of 4 important ingredients:
sugar, self-raising flour, butter and eggs (by weight).
I reduced the sugar to 200g and replaced 1 egg for the same quantity of coconut milk, and added a teaspoon of vanilla essence.
- Cream butter and sugar till it is light and fluffy (almost white)
- Add egg one at a time, each time until it is emulsified. Then stir in the milk and vanilla.
- Fold in flour with as few strokes as possible.
- Bake at 175 degree Celcius, for 45 minutes on the medium shelf.
Cake is almost always a hit if you use the best butter unsalted butter you can afford. 🙂
