My version of blackforest cake. My childhood favourite. My heirloom recipe. My many happy memories. Sharing the recipe here in case someone wants to try.

Traditional Black Forest Cake


Egg Yolk Mixture (Beat together):

2 egg yolks

50g water

50g oil

1/2 tsp vanilla

1 TBsp pure cocoa powder

50g Optima flour

50g plain flour

1/8 tsp soda.


2 egg whites

1/8 tsp cream of tartar

50g sugar

Filling (cook until thickened)

1 can pitted cherry in syrup.

3 TBsp cornflour

Some lemon juice and sugar


500ml cream

1 tsp vanilla

1 TBsp icing sugar


  1. Fold in both mixtures.
  2. Bake in 7 inch round pan.
  3. 180°C about 35 min.
  4. Cool completely.
  5. Slice into 3 slices.
  6. Mix all ingredients for filing and cook till thickened.
  7. Stir in 1 tsp brandy.
  8. Assemble cake
  9. Put cream on first slice.
  10. Put 1/2 of the cherry filling on cream.
  11. Do the same for second slice.
  12. Put only cream on third slice.
  13. Decorate with choc and cherries.
  14. Usually people use those preserved cherries but we prefer fresh ones. It's up to you.
  15. Fridge overnight for flavour to meld.
